Since his youth he grew up without ever forgetting where he came from, without betraying the teachings of his mother and grandmother, combining tradition and innovation and modern techniques, while at the same time keeping a surprising, beautiful and concrete way of cooking, sophisticated and rich in aestetics. Salvo, in this way, wants to tell the joy of his work to the guests, joy not only for the eyes but also for the taste, in line with the luxurious surrounding of the restaurant and baring in mind that the true richness is the quality of the raw materials, which allows the chef to narrate the history of his birth-place.”
